Recipe: Rice pudding for lunchboxes!

Easy & Delicious Rice Pudding

Now onto the Easy & Delicious Rice Pudding recipe!

I have been making this recipe for my kids for years and it is not only delicious it is also REALLY easy! This recipe comes from my friend Mimi who is an amazing cook amongst other things! Check out her Facebook page ‘Mimi’s Savings Secrets’ for some great tips and recipes.

I will often make this for dessert and for lunch boxes (it will do dessert one day and a few lunches!)…And tastes amazing hot or cold. My kids prefer it cold so it is a great lunchbox filler. Easy & Delicious Rice Pudding

 

Ingredients:

¾ cup Arborio (medium grain) rice

1 litre of milk (I use skim milk)

1-2 teaspoons vanilla essence

2 tablespoons sugar

 

 

Directions:

Combine all the ingredients in a saucepan and stir continuously over a high heat until the milk starts to boil.

Remove from the heat and turn the hot plate off. Stir the mixture and return to the hot plate. Put a lid on and leave for 30 minutes. Watch initially for milk bubbling over…if this happens remove from the heat again for a few minutes then return to the hot plate.

After 30 minutes stir the mix. The rice should be soft at this stage. Put the lid back on and return to the hot plate. Leave for another hour. Stir and serve or chill to serve hot or cold later.
